Roasted Zucchini & onion



1 large zucchini

½ red onion

2 cloves of garlic

3 tbsp of olive oil

1 tbsp fresh rosemary

Salt and pepper to taste



Finely chop the garlic (this releases an enzyme called alliinase that catalyzes the formation of allicin, a compound associated with garlic’s health benefits. It needs time, so its better to start with this) and place it in a bowl along with the fresh rosemary and set aside. Preheat the oven to 400 degrees F. Lightly grease a baking sheet with coconut oil and set aside. Finally slice the zucchini into circles about ¼ inch thick and onions a bit thinner and place them in the same bowl. Generously drizzle with olive oil.

Spread the vegetables on the baking sheet and sprinkle with salt and pepper.

Bake for 20 minutes or until zucchini gets a golden color.

Enjoy it as a healthy snack, you can serve it with a side of tahini!
